From February 8 to 10, Taste in Florence returns to the Fortezza da Basso, and like every year, the whole city will be enlivened by the Fuori di Taste initiatives. Restaurants, cocktail bars, and historic venues will be the protagonists of all kinds of events and it will be possible to choose from a rich calendar of dinners, tastings, meetings and immersive experiences in the world of taste.
Among them, on Feb. 7, Cibrèo Ristorante & Cocktail Bar, together with Accademia del Caffè Espresso, will give life to NEW CAFFÈ PARADISO, a true gastronomic experience to be held in the prestigious Cibrèo spaces located inside the Helvetia & Bristol Hotel.
Cibrèo Group Executive Chef Oscar Severini and Cibrèo Restaurant & Cocktail Bar Resident Chef Gabriele Avanzi, involved the Chefs and Coffee Team of Accademia del Caffè Espresso, a cultural center devoted to promoting espresso coffee, created by La Marzocco within its old production facility. From this union of knowledge came to life a unique menu, which will be offered at a dinner event to discover the complexity of coffee in all its forms.
A real “happening” that will be able to combine the experience of an important gastronomic journey with an in-depth study of such a complex ingredient, creating an immersive journey into coffee. The dinner will be a multisensory event of 5 courses and 4 cocktails that will tell the story of coffee in all its evolution: flower, berry, bean, processing, and extraction will be the protagonists of a new culinary experience that will surprise, intrigue, and excite.

Entrée: Parmesan Sablé, Green Coffee Powder, Pate and Maldon Salt
Appetizers: Espresso Lacquered Scallops and Parsnip Puree
Potato Cappuccino with Cardoncelli and Coffee Flower Powder
First course: Cappelletti Stuffed with Coffee-flavored Pecorino in Hen Broth with Cascara Oil
Second course: Saddle of Venison with Farinata, Chocolate Fondant and Cold Brew
Dessert: Coffee Zabaione Cream, Mascarpone Ice Cream, and Savoiardi Cookies.
