The Barista Skills Foundation course allows learners to gain an introductory understanding of the coffee itself as well as foundational skills required to set a grinder, make espressos, foam and texture milk and latte art techniques as per SCA quality standards, while implementing health and safety practices and customer service.

The Barista Skills Intermediate course builds on the concepts and skills introduced in the Foundation course. It is ideal for someone who has barista skills experience and wants to explore how to improve coffee quality and prepare for more complex job functions found in the barista profession. Through this interactive course, learners will gain a deeper understanding of the coffee itself, specifically the impact of a coffee’s variety, origins and processing methods on flavor; the parameters of coffee quantity, grind texture, water quality, and shot time and their interaction when dialing in a brew recipe.

Duration: 2 days: 14 hours

Un corso di altissimo contenuto, ideale per acquisire competenze non comuni sul prodotto caffè sia teoriche che pratiche.
Fornisce una solida conoscenza del caffè e delle caratteristiche di gusto delle varietà e approfondisce le competenze pratiche apprese nel livello Foundation.
Vengono acquisite tecniche avanzate per l'estrazione: granulometria e i suoi effetti, Brew Ratio, distribuzione particolato. Inoltre analisi sensoriale, analisi dell'acqua e molto altro.

The Barista Skills Professional course is designed to test advanced skills and detailed knowledge of the science behind processes used by a professional barista. In particular, participants will learn a sophisticated tasting methodology and descriptive explanation of coffee flavors; gain a detailed understanding of drink ingredients and the techniques available to maximize the quality of the drinks made.

Il corso Professional è adatto a Baristi con notevole esperienza ed eleva le loro competenze a livello altamente professionale.
Fornisce una visione molto ampia e approfondita sia in chiave scientifica che manageriale, del prodotto caffè.
Ne approfondisce la conoscenza le sue caratteristiche organolettiche a seconda della provenienza.
Affronta in modo molto tecnico il tema dell'acqua per il caffè, fornisce le competenze per la scelta del caffè più idoneo per il locale, per la scelta e l'utilizzo altamente professionale delle attrezzature.

The Brewing Foundation course introduces the learner to the different methods of brewing coffee. The learner will receive theoretical and practical hands-on instruction for a range of devices including automatic and manual gravity brewers, as well as other commonly used brewers within their local culture.

The Brewing Intermediate course covers a wide range of topics, including an exploration of the brewing process in terms of device usage; extraction order and wetting; the essential elements of brewing and their individual influence on the final cup; the scientific measurement of extracted coffee strength and charting a coffee’s extraction; analysis of brewed coffee and espresso and adjustments to consider in order to deliver a correctly extracted, well-balanced cup.

Brewing Intermediate è un modulo ricco di interesse e approfondimenti che consente di passare ad un livello di professionalità elevata nelle estrazioni con metodi alternativi all'espresso. Analizzeremo le variabili (temperatura, macinatura, tempo, ecc...) capiremo come e perchè influenzano l'estrazione anche nei diversi metodi per preparare il caffè.

With the Brewing Professional course,learners take a deeper and more scientific look at the essential elements of good brewing, what happens when brewing parameters are manipulated, and how to master navigation of the coffee brewing control chart. Learners will gain a deeper understanding of water and its impact on brewing, specifically utilizing the ideals of aim, measure, and treatment.

In questo corso si apprende ad esaminare scientificamente la preparazione del caffè usando i più avanzati metodi di analisi nonchè a navigare a proprio piacimento nella Coffee Brewing Control Chart, acquisendo la padronanza per modificare efficacemente e velocemente i parametri di estrazione ottenendo il massimo dai diversi caffè.

A class to master coffee extraction with alternative brewing methods. It gives an understanding of the many variables affecting the extraction and explains how to adjust those to get the best out of a given coffee.

Learn how to manage the parameters of the roasting process, and how it can enhance the characteristics of the green beans.

Impara a gestire i parametri della tostatura e come valorizzare con il processo di torrefazione le caratteristiche del caffè verde.

In this course each box on the cupping form will be explored theoretically and will be experienced in multiple methodologies both with and without coffee. A general knowledge exam drawn from the course pre-work and the content delivered in the course, properly completed cupping forms and a mathematic and descriptive calibrations will be the metrics used to validate the attendee's learning and verifying their proficiency.

Cuppers earning their Q Cupping Essential certificate will be able to cup consistent with the CQI protocols and procedures and demonstrate a working understanding of the cupping form. They will have developed the foundations of the global common language of quality and know how to apply that language correctly.

Il corso esamina tutte le sezioni di una scheda di cupping, sia in maniera pratica che teorica, utilizzando diverse metodologie. La valutazione finale si compone del lavoro svolto durante il corso, della corretta compilazione delle schede per il cupping e della calibrazione matematica e descrittiva. I partecipanti che riceveranno la certificazione Q Cupping Essentials potranno valutare il caffè secondo i protocolli CQI e avranno sviluppato le basi di un linguaggio comune per la descrizione e valutazione della qualità in tazza. Il corso sarà tenuto in inglese.

Certified Q Arabica Graders must calibrate with each other every three years in order to test their abilities to accurately evaluate coffee quality based on their gained experience, knowledge, and standards/protocols learned in Q training. It is mandatory for all Q Graders to participate in calibration if they wish to remain active as a Q Grader in good standing. The calibration consists of three cupping flights, (or tables- 6 samples each) of coffees with distinct attributes. The sessions include one of Washed Milds, one of Naturals and one of either Africa or Asia. All Q Graders must be in calibration and pass two of the three flights in order to renew their certifications and continue as Certified Q Graders. Upon passing, the Q Grader certification will remain valid for another 36 months, starting from the day of the calibration course. Calibration course is dedicated for Q Graders who need to renew their license. It composes of lecture and 3 cupping rounds.

I Q Grader certificati devono calibrarsi ogni 3 anni, per certificare la loro capacità di valutare la qualità del caffè, in conformità con i protocolli e gli standard CQI. La calibrazione è obbligatoria per i Q Grader che vogliono rinnovare la loro certificazione. La calibrazione consiste di 3 sessioni di cupping (6 campioni ciascuna) di caffè con proprietà distintive. Le sessioni includono un cupping di caffè lavati, uno di caffè naturali, e uno di caffè africani o asiatici. Tutti i Q Grader dovranno passare due delle tre sessioni per rinnovare la loro certificazione. La certificazione sarà valida per 36 mesi dal giorno del corso. Il corso di calibrazione sarà tenuto in inglese ed è dedicato ai soli Q Grader che devono rinnovare la loro certificazione.
